Cheese Dumplings on Mixed Salad
Pan-fried, crispy Tyrolean cheese dumplings served hot over a colourful, crisp garden salad tossed in a sweet-and-tangy honey-mustard vinaigrette.

Measure all ingredients. Finely dice the Onion, grate the Vegetarian mountain cheese, and finely chop the Flat-leaf parsley and Chive. Cut the Tomatoes into wedges, and thinly slice the Cucumber and Radishes.
Place the 250g white bread cubes in a large bowl, pour the 150ml milk evenly over them, and let soak for 10 minutes until softened.
Melt the 30g butter in a pan over medium heat. Add the diced Onion and cook for 3–4 minutes until soft and translucent, then remove from the heat and let cool slightly.
Add the cooled sautéed Onion, 2 egg, grated 150g vegetarian mountain cheese, 20g wheat flour, chopped Flat-leaf parsley, ¾ tsp salt, ½ tsp black pepper, and 1 pinch nutmeg to the soaked bread. Mix thoroughly with your hands until a cohesive dough forms. Let the mixture rest for 20 minutes to allow the starch to bind.
Whisk the 60ml apple cider vinegar, 90ml olive oil, 5ml medium-hot mustard, and 5ml honey with the remaining ½ tsp salt and ¼ tsp black pepper in a bowl until emulsified.
Divide the dumpling dough into 8 equal portions. Using moistened hands, shape each portion into a ball and then press it flat into a patty about 1.5–2 cm thick.
Heat the 30ml canola oil in a large non-stick frying pan over medium heat. Fry the flat patties for 4–5 minutes per side until they develop a deep golden-brown, crispy crust.
Toss the 150g mixed salad greens, Tomatoes, Cucumber, and Radishes with the prepared dressing in a large bowl. Scatter the chopped Chive over the top.
Divide the dressed salad bouquet among plates and top each portion with two hot, crispy cheese dumplings.
