This viral sensation features creamy baked feta cheese, bursting cherry tomatoes, and aromatic herbs tossed with al dente pasta for a quick and satisfying meal.
Mise en Place: Wash 600 g cherry tomatoes, mince 3 clove garlic, chop 50 g sun-dried tomatoes, and cook 300 g pasta according to package directions until al dente.
Preheat your oven to 200°C (400°F). Place the 600 g cherry tomatoes in the bottom of a baking dish.
Nest the 200 g feta cheese in the center of the cherry tomatoes.
Scatter the minced 3 clove garlic and chopped 50 g sun-dried tomatoes over the cherry tomatoes and feta cheese.
Drizzle with 30 ml olive oil and sprinkle generously with 15 ml dried herbs.
Bake for 20-25 minutes, or until the cherry tomatoes are blistered and bursting, and the feta cheese is soft and slightly browned.
Remove the baking dish from the oven. Mash the baked cherry tomatoes, feta cheese, and other ingredients in the dish together with a fork until a creamy sauce forms.
Add the cooked pasta to the baking dish.
Toss all ingredients thoroughly until the pasta is evenly coated with the rich sauce.
Serve immediately, grating 30 g parmesan over each portion.
