Preheat the oven to 180°C Ober-/Unterhitze. Lightly grease and flour a standard loaf pan (approx. 23x13 cm). Mash the 2 banana in a large bowl with a fork until mostly smooth but with a few small lumps remaining. Roughly chop the 50 g walnuts.
In a separate medium bowl, whisk together the sifted 175 g all-purpose flour, 100 g granulated sugar, 8 g baking powder, 2½ ml baking soda, 5 ml cinnamon, and 2½ ml salt.
To the mashed banana, add the 80 ml vegetable oil and 5 ml vanilla extract. Whisk until well combined.
Pour the dry ingredients into the wet ingredients. Mix gently with a fork or spatula until just combined. Be careful not to overmix, as this can lead to a tough banana bread.
Gently fold the chopped walnuts into the batter.
Pour the batter into the prepared loaf pan. Bake in the preheated oven for 50-60 minutes, or until a wooden skewer inserted into the centre comes out clean.
Let the banana bread cool in the pan for 10 minutes before carefully transferring it to a wire rack to cool completely.
