Mise en Place — Crumble 200 g sausage. Dice 1 red bell pepper, 1 green bell pepper, and 1 onion.
Chop 30 ml green onion. Measure 240 ml cottage cheese, 180 ml shredded cheese, 5 ml salt, and 2½ ml black pepper. Whisk 6 egg in a large bowl.
Cook 200 g sausage in a large skillet over medium heat until browned and cooked through, about 5 minutes. Drain any excess fat.
Add diced red bell pepper, green bell pepper, and onion to the skillet with the cooked sausage. Sauté for 5 minutes until vegetables are softened.
Preheat oven to 350°F (175°C). Spray a 12-cup muffin tin with 10 ml cooking spray. In the bowl with the whisked egg, add the cooked sausage and sautéed vegetables, 240 ml cottage cheese, 180 ml shredded cheese, 5 ml salt, and 2½ ml black pepper. Stir to combine. Divide the mixture evenly among the prepared muffin cups.
Bake for minutes, or until the egg bites are set and lightly golden.
Remove the muffin tin from the oven and let the egg bites rest for 5 minutes before carefully removing them from the tin. Serve warm.
