French Onion Mac and Cheese
Rich and comforting macaroni and cheese infused with the deep, sweet flavors of caramelized French onions, crispy bacon, and a melted, bubbly Gruyère crust.

Rich and comforting macaroni and cheese infused with the deep, sweet flavors of caramelized French onions, crispy bacon, and a melted, bubbly Gruyère crust.
Slice the Sweet onion, mince the Garlic, and finely chop the Rosemary and Thyme. Chop the Green onion for garnish.
Cook the 240g bacon in a large pot or deep skillet over medium-high heat for 6–8 minutes, until crispy. Remove the bacon and set aside, leaving the rendered fat in the pan.
Add the 3 sweet onion, 30ml butter, and 5ml salt to the pan. Cook over medium heat for 12–15 minutes, allowing a slight char to form on the bottom before deglazing with 30ml water and scraping up the browned bits. Repeat this deglazing process until the onions are deeply browned and sweet.
Add the 3 clove garlic, 5ml rosemary, and 5ml thyme to the caramelised onions. Cook for about 1 minute, stirring constantly, until fragrant.
Pour in 800ml beef broth and add the 300g pasta. Bring to a simmer and cook for 10–12 minutes, stirring occasionally, until the pasta is cooked through and most of the liquid has been absorbed.
Stir in the 480ml milk, 170g cheddar cheese, and 140g gruyère cheese over low heat until the cheese is completely melted and the sauce is smooth. Fold in the cooked Bacon.
Top the pasta with the remaining 55g gruyère cheese. Transfer the pot into the oven at 200°C Ober-/Unterhitze for 5–7 minutes, or until the cheese on top is melted and bubbly.
Scatter the 2 green onion over the melted cheese before portioning and serving hot.
