Whip up a vibrant and satisfying Greek omelette in under 15 minutes, packed with fresh spinach, tangy feta, and aromatic mint for a quick and nutritious start to your day.
Mise en Place — Finely chop 120 ml spinach and 120 ml onion. Chop 60 ml tomatoes and remove seeds. Thinly slice 20 ml black olives. Chop 30 ml mint. Crumble 120 ml feta.
Whisk 8 egg, 60 ml milk, 5 ml salt, and 5 ml black pepper in a bowl until well combined and frothy.
Heat 60 ml olive oil in a non-stick pan over medium heat.
Add 120 ml spinach, 120 ml onion, 60 ml tomatoes, and 20 ml black olives to the pan.
Sauté the vegetables for 2-3 minutes, stirring frequently, until softened.
Spread the sautéed vegetables evenly across the pan.
Pour the whisked egg mixture over the vegetables.
Cover the pan with a lid and cook until the egg mixture is mostly set, about 3-5 minutes.
Sprinkle 120 ml feta and 30 ml mint over the partially set omelette.
Gently fold the omelette in half using a spatula.
Slide the omelette onto a plate and serve immediately.
