Measure out 340g rice noodles, slice 2 green bell pepper, halve 2 lime, mince 4 clove garlic, and measure the 4 tbsp soy sauce, 2 tbsp honey, 2 tsp sesame oil, and 2 tsp rice vinegar.
Cook 340g rice noodles in boiling water for 4–6 minutes just until tender, then drain and rinse under cold running water to prevent sticking.
Add 450g ground beef and 4 clove garlic to a large pan over medium-high heat, and cook for 6–8 minutes, breaking it up with a wooden spoon, until the beef is cooked through and the edges are crisped and deeply browned.
Whisk 4 tbsp soy sauce, 2 tbsp honey, 2 tsp sesame oil, and 2 tsp rice vinegar together in a small bowl, then pour the mixture into the pan with the beef and let it bubble for 1–2 minutes until it thickens into a glossy glaze.
Toss 2 green bell pepper into the pan and cook for 1 minute, ensuring it softens slightly but still retains a crisp texture.
Add the cooked Rice noodles to the pan and toss everything together for 1–2 minutes until the noodles are hot and thoroughly coated in the glaze, then squeeze the juice of 2 lime over the top before serving.
