Sweet and tangy no-bake lemon bars featuring a crumbly almond and oat flour base, brightened with fresh lemon zest and juice, and topped with a smooth layer of white chocolate.
Measure 260 g almond flour, 120 g oat flour, 40 g butter, and 75 ml maple syrup. Zest and juice 2 lemon, reserving some zest for garnish.
Melt 40 g butter in a small saucepan or microwave-safe bowl.
Add 260 g almond flour, 120 g oat flour, the melted butter, 2 tbsp lemon zest, 3 tbsp lemon juice, and 75 ml maple syrup to a food processor.
Blend the mixture in the food processor until well combined and a dough-like consistency forms.
Transfer the mixture to a lined container and firmly press it down to create an even layer.
Melt 150 g white chocolate in a double boiler or microwave, stirring until smooth.
Spread the melted white chocolate evenly over the lemon bar base.
Refrigerate the bars for at least 30 minutes to allow them to set completely.
Remove the bars from the refrigerator, top with 1 tbsp extra lemon zest, slice, and enjoy.
