Sear the chicken
Chicken breast
6 tbspVegetable oilHeat a heavy-bottomed stainless steel sauté pan over medium-high heat. Add 6 tbsp vegetable oil and heat until shimmering with slight wisps of smoke. Carefully place the Chicken breast into the hot pan in a single layer, dropping them away from you, and reduce the heat slightly to medium. Sear for 4-5 minutes per side, or until deeply golden brown, bouncy to the touch, and the internal temperature reaches 150-155°F (66-68°C). Transfer the cooked Chicken breast to a wire rack set over a plate or cutting board to rest for 10 minutes while you make the sauce, reserving any accumulated juices.
